The Great House is also home to one of the finest private club fitness centers in the U.S. with experienced health and wellness professionals on hand to help improve anyone’s game. It also services Members with luxurious Men’s and Women’s Lounges, an impressive wine room, a charming library, golf shop and the upcoming Escondido Spa.

Meet the Chef.
Chef Tony Castillo’s passion for culinary excellence as well as his experience in a private club setting serve him well at The Great House. As a graduate of The Art Institute of Dallas, Chef Tony went on to work in Dallas for several fine establishments including the Fairmont of Dallas and Pyramid Restaurant as well as the Four Star, Four Diamond Hotel Crescent Court and The Crescent Club.
Most recently, Chef Tony provided consistent, yet highly creative menus at the Wichita Falls Country Club where he oversaw all dining operations from large-scale banquets to casual dining, private wine dinners, cooking classes and fine dining. As Executive Chef, he also hired, trained, and mentored a large kitchen staff, managed food cost and ordering, and worked with Members to develop customized menus for special events.
We are fortunate to have found Chef Tony as it can be challenging finding the right Chef for a private club like Escondido. The dining experience must first meet the high expectations of our Members but it must also be flexible to cater to many different types of occasions from poolside service to special events to a flawless fine dining experience.
